Tasty Hot Mexican Bowl

Serves two hungry humans.

You’ll need..

Black beans, quinoa, avocado, diced red onion, tomato & capsicum, mixed leafy greens, 4-6 eggs, savoury yeast and hemp seeds. Salt, pepper & chilli flakes & a dash of coconut oil to cook with.

How to…

Cook quinoa in the ratio of 1 cup of quinoa to 2 cups of water until soft then let it rest for a few minutes after cooking & fluff with a fork.

While the quinoa is cooking, drain the black beans & Mash them, then heat them in a fry pan with coconut oil with salt, pepper & chilli flakes.

Remove to a side dish & use the same pan to scramble eggs with two table spoons of savoury yeast & a handful of mixed leafy greens.

Serve in a bowl in this order… 1/2 cup quinoa, 1/2 of the fried black bean mix, 1/2 of the scrambled eggs, add a few table spoons of the diced red onion, tomato, capsicum & a healthy wedge of avocado and sprinkle with a tablespoon of hemp seeds.

If you are super fancy you can squeeze a dash of lime on top.

Enjoy for breakfast, lunch or dinner.
